Jam making

Jam making (from fruit) relies mainly on the high sugar content of the concentrated product for preservation.
The other two essential elements are natural acids and pectin. Pectin is present in the seeds, core and skin of the fruits, and can be found in higher concentrations in slightly ripe fruit.
Jam production requires relatively large amounts of heat, but can be accomplished sustainably with solar ovens and stoves.
